Lemon Garlic Whole Grain Pasta
I don’t know about you, but a quick, simple and filling meal sounds perfect after a long work day. I accomplished this meal after barre class and while managing multiple loads of laundry. What I am trying to say is, this doesn’t take hours and super close attention!
What you will need:
- 1 box of whole grain pasta or vegetable protein pasta of choice 
- Baby Bella Mushrooms (10 mushrooms) 
- 1 cup of spinach (I chose frozen) 
- Fresh Lemon 
- 2 chicken breasts 
- Olive oil cooking spray 
- 3 garlic cloves 
- Parmesan cheese 
- Salt and pepper 
To make:
- Preheat your oven to 400 F. Season chicken breasts with salt, pepper and a sprinkle of garlic salt. Cook your chicken breasts for about 20 mins (mine were partially still frozen, so it took about 25 minutes, but always check with a thermometer to make sure they are at least 165 F internal temperature). 
- Pasta Time. Boil a pot of pasta, add in a quarter sized serving for each person. Add salt. 
- While the chicken and pasta are cooking, it’s veggie time. Coat a pan with olive oil spray. Start washing and slicing you're mushrooms. Sauté over medium heat for 10 minutes. 
- Add 1 cup of frozen spinach (or 3 cups of fresh spinach). 
- Drain pasta. 
- Without heat on, add 1 tablespoon of olive oil to bottom of pasta pot. Add pasta back in. 
- Incorporate mushroom and spinach mixture into pasta. Add parmesan cheese to taste. Let it melt into the dish. 
- Place lid on pot. 
- While pasta is sitting, slice chicken.
