Pecan Chocolate Banana Bread
I can’t stand following recipes… So here is how I ended up making this one. I was craving banana bread, looked up some of the general ingredients online, raided my fridge, tore through the pantry, and came up with this. Hope you enjoy! I opted out of the sugar for this one, but add if you desire. I was feeling the salty and sweet combo today, so I added a slather of butter on top cure that craving.
What You’ll Need:
For Bread:
- 3 ripe bananas 
- 1 cup of coconut flour 
- 1.5 cups of all purpose flour 
- 1 TSP salt 
- 3 eggs 
- 1/4 cup of walnuts 
- 1/4 chopped dark chocolate (or, chips!) 
- 1 TSP baking powder 
- 1 cup sugar OR stevia to taste of choice (I skipped it this time but sometimes I add it) 
- Coconut oil spray 
- Parchment paper 
For Topping:
1/4 cup of walnuts
1/4 cup chopped dark chocolate bar (or, chips!)
To Make:
- Preheat oven to 350F. 
- Line baking tin with parchment paper and spray with coconut oil spray. 
- Line baking loaf with parchment or wax paper. Coat with coconut oil spray (this is key to bringing out the coconut oil flour taste). 
- In one large bowl mix flour, baking powder, salt, chopped chocolate and pecans. 
- In the other large bowl combine eggs, bananas and stevia if desired. Mix. 
- Slowly incorporate the dry into the wet ingredients. Do not over mix! 
- Gently add mix to loaf pan. 
- Take a spatula and make a 1/4 inch deep line into the center of the loaf to allow for expansion during the baking process. 
- Place chocolate and pecan toppings on top. 
- Bake for 30 minutes or until the tooth pic is “clean” when you place it into the center of the loaf and remove.
