Simple Shrimp and Spinach Tortellini Pesto
I am all about 15 minute meals. Especially during the week night. Check out this simple shrimp and tortellini pesto which is packed with protein and flavor.
This is my type of comfort and fast food during a weeknight!
1 lb of frozen or fresh shrimp.
1 jar of pesto.
1 lb of cheese tortellini.
Olive oil.
Onion powder.
Garlic salt.
I started out by boiling a pot of water, and placing 1 lb of shrimp into boiling water. I then rinsed and drained them, once they were opaque. Next, I transferred the shrimp a frying pan with 1 tablespoon of olive oil, and tossed the shrimp in. I added about 3 tablespoons of the pesto sauce and placed on low heat. In the mean time, I cooked the tortellini as directed on the packaging. I love to add 1 tablespoon of olive oil and garlic salt to the boiling pot of water to enhance the flavor. Once the tortellini was complete, I drained the pasta and then added it to the frying pan with the shrimp. I then tossed the mixture, and added 3 more tablespoons of pesto and let simmer. That’s it!
