Egg Roll in a Bowl
Love easy dinner recipes that you can make in less than 30 minutes? Same!
I usually don’t go for recipes that have a lot of ingredients, and to me, this one did. But I went to the store and picked up a few items because while in quarantine I wanted to experiment with different flavors and dishes.
If you don’t have all of these items, don’t worry! Just try to make it work in your pantry or pick up one of the “extra” items. That’s that I do 99% of the time. Make the recipe your own!
What you’ll need:
1 lb of ground pork or beef
1 tsp of ground ginger
Fresh green onion
1 large yellow onion
Fresh garlic (4 gloves)
1- 14 ounce bag of Cole Slaw Mix or cabbage mix
1/2 cup Low sodium soy sauce
2 eggs
2 tablespoons of sesame oil
2 tsp of sesame seeds
Let’s get started:
Grab your biggest frying pan and let’s get started. Add in your sesame oil, let it heat up. Then add in your 1 lb of ground meat choice, garlic (you can use 3 tsp of garlic powder if you have that on hand instead), or 4 cloves of fresh garlic (pressed). Then add in 1/4 of large yellow onion, chopped finely. Let the meat sit and cook until no longer pink.
Next add in your cole slaw mix, ground ginger, soy sauce. Mix all together and let cook for about 3 more minutes, or until cole slaw starts to cook down and desired tenderness is achieved. Then make a well at the center of the pan, crack your egg and scramble. Mix into your dish. Then repeat again with the second egg. Top with sesame seeds and green onion to taste. Enjoy!
